Mixed Berry Sparkler (Non- Alcoholic)

 75 g Mixed berries (½ cup) use a mix of strawberries, raspberries and blueberries
 2 tbsp Lemon juice
 3 tsp Honey If using thick honey, melt it slightly to help it combine more easily with the fruit
 6 fl oz Sparkling water - or enough to fill the glass
 2 Ice cubes (1 to 2 large ice cubes)

Muddle the berries: In a glass or shaker, muddle the mixed berries thoroughly to release their lovely juices. If you prefer a smooth drink without fruit debris, strain the berry mixture after muddling to extract the juice.

Combine: Add the lemon juice and honey to the muddled berries (or strained juice). If using thick honey, melt it slightly so it mixes well with the fruit. Stir or shake well until combined.

Prepare the glass: Fill a serving glass with ice and pour the berry mixture over it.

Top with sparkling water: Add sparkling water to fill the glass, and gently stir to mix.

Garnish: Finish with a few whole berries or a slice of lemon for decoration.

A small slice of peeled ginger for a hint of spice (added to the drink after pouring)

Lime juice instead of lemon for a tangy alternative
