Manuka Honey Protein Balls

These are the perfect on-the-go snack. Naturally sweet, full of texture and packed with goodness, they are ideal to prepare ahead and keep chilled.

🥜 RECIPE 2: MANUKA HONEY PROTEIN BALLS
Yields1 Serving
 200 g Almonds
 200 g Medjool dates, pitted
 100 g Shredded coconut
 100 g Walnuts, toasted
 100 g Pumpkin seeds, toasted
 50 g Sunflower seeds, toasted
 4 tbsp Manuka honey
 1 tsp Berry powder or cacao (optional)
 100 g Finely chopped pistachios or toasted coconut
 Zest and juice of 2 lemons

Place all ingredients except the coating into a food processor.

Blend until the mixture comes together but still has a little texture — you want that lovely crunch from the nuts and seeds.

Roll into even-sized balls using your hands.

Finish by rolling in chopped pistachios or toasted coconut for extra flavour and crunch.

Place in the fridge for at least 30 minutes to firm up… if you can wait that long!

They keep beautifully chilled and are brilliant to make ahead for the week.

The lemon gives them a beautiful freshness, while the Manuka honey adds a rich depth of flavour that makes them feel incredibly satisfying.

Ingredients
