This is just the most delicious salad – I love goats’ cheese and it is thought to be one of the earliest made dairy products and has been made thousands of years. This combined with the sharp delicious taste of blood oranges and the crunch of roasted almonds is just heaven.
Cook quinoa according to instructions with (opt.) a little vegetable stock (add a little and taste test if you are unsure)
Meanwhile, add all dressing ingredients into an old jar and shake vigorously until combined. Do the taste test.
Toast your flaked almonds on medium heat and dry pan until golden.
Add your kale, quinoa, blood oranges and 1/3 of the dressing to a large bowl and toss until the kale turns a vibrant green colour. Then top with goats cheese and almonds.
Serve with the rest of the dressing on the side, so the salad doesn’t go soggy while you wait. Enjoy!
