Butter bean hummus

With the classic flavours of garlic, lemon, and tahini, this creamy and healthful butter bean hummus is a wonderful alternative to regular hummus.

Yields1 Serving
 400 g butter beans tinned
 4 tbsp tahini
 juice half a lemon juice
 2 cloves garlic peeled and crushed
 2 tbsp extra virgin olive oil
 pinch cumin

Pop the tahini, lemon juice, garlic and water into a blender and blitz well to a paste.

Drain and rinse the butter beans and add to the blender, along with the olive oil, cumin and a generous seasoning of salt and pepper.

Blitz again until the hummus has reached a smooth purée. Taste and add more salt, lemon juice or olive oil as required and any other seasoning.

Serve with a drizzle of olive oil and an (optional) sprinkle of paprika

You can flavour this will all sorts of things and add different flavoured oils or pop in some pesto add some Olivers, shopped sun-dried tomatoes or fresh herbs.

Butter Beans can be quite bland so make sure you season this well!
