Quick Healthy High-Protein Mayonnaise

Enjoy your homemade, high-protein, low-oil mayonnaise as a spread, dip, or dressing!

Healthy High-Protein Mayonnaise (Low-Oil)
Yields1 Serving
 3 Boiled eggs (hard-boiled)
 2 tbsp Olive oil
 1 tsp Vinegar (white wine or apple cider)
  cup Water
 ½ tsp Pepper
 Salt to taste

Peel the boiled eggs and place them in a blender.

Add olive oil, vinegar, water, pepper, and salt.

Blend until smooth and creamy.

4

Taste and adjust seasoning if needed.

Store in an airtight container in the fridge for up to a week.

Delicious served with some Avocado, tomatoes on some homemade sourdough bread!
