
Place all ingredients into a bowl or jar and whisk together well, making sure the chia seeds are evenly combined.
Leave for 10 minutes, stir again, then place in the fridge for at 1 to 2 hours
The yoghurt creates a rich, almost mousse-like texture that feels incredibly satisfying. When making it, you can also add fresh fruit directly into the mixture if you wish. I sometimes stir through a small handful of berries (around 40–50g) or add a little grated lemon zest for extra freshness and flavour.
Serve with fresh berries, nuts or seeds for extra texture and goodness.
For a more elevated presentation, perfect for brunches, entertaining or beautiful content photographs: Spoon a layer of chia pudding into a glass or bowl. Add a layer of yoghurt. Top with fresh berries, nuts or seeds. Repeat the layers until full.
