Frozen Christmas Ice Cream Parfait

If you’re looking to try something a little different from the traditional Christmas pudding this year, this Festive Layered Ice Cream Pudding is a fabulous option! It combines the rich flavours of a classic Christmas pudding with the refreshing coolness of ice cream and works pecfectly with all the traditional puddings if you want to bring in another alternative pudding!

Frozen Christmas Ice Cream Parfait
Yields1 Serving
 1 Litre Vanilla Cornish ice cream (good quality ice cream)
 1 Litre Chocolate ice cream
 3 tsp Amaretto, rum, or orange juice (optional)
 1 Punnet of raspberries
 80 g Chopped pistachios
 70 g Candied fruits
 60 g Dark chocolate chips (optional)
 1 Zest of 1 orange
 1 Zest of 1 lime
Topping:
 180 g Dark chocolate, melted
 Extra raspberries, chopped pistachios, lime zest, and cherries for decoration

Allow the ice cream to soften slightly for easier handling.

Mix with half the zest, pistachios, and candied fruits. Spread in a lined loaf tin or springform pan and press raspberries into the mixture. Freeze for 30 minutes

Spread the chocolate ice cream over the vanilla layer and sprinkle with dark chocolate chips. Freeze for 30 minutes.

Melt dark chocolate and pour over the dessert. Garnish with extra raspberries, pistachios, candid peel lime zest and cherries.

Let the dessert sit at room temperature for 5-10 minutes before slicing and serving.

Tips for Alternatives:

Substitute with coconut ice cream and use non-dairy dark chocolate for a vegan version.
