Favourite Weekend Puff Pastry Tray Bake

This is one of my absolute favourites and something you can whip up in no time for a quick lunch at home or when visitors arrive unexpectedly. I always keep a couple of rolls of puff pastry in the freezer, as it means you can create something delicious with whatever you have to hand.

Simple, comforting, and effortlessly impressive, it is always a winner.

Brie, Cranberry, Pancetta & Caramelised Onion Tart

This tart brings together creamy Brie, bright cranberry sauce, crisp pancetta, softly caramelised red onion and fragrant thyme all baked on golden puff pastry. It’s simple, elegant and always a crowd favourite.

Roasted Tomato Soup with ThymeThis is such an easy recipe and you can play around with it in all sorts of ways by adding different herbs or some chilli flakes and spices. I also love to add basil or stir through a couple of teaspoons of basil pesto. You can add croutons, mix in some creme fresh, or soured cream. If you are vegan you can substitute this with coconut milk. You can serve this soup hot or cold and make it as thick or thin as you like depending on how you like your soup.
